Milk: Pasteurized goat's milk Type: Soft cheese with a white mold rind. Fat: 45% Maturation: 3 weeks minimum. Region: Centre-Loire Valley Serving: 200g approx. Its rind is white, similar to that of a Camembert. At its core, you can see a crumbly, moist, fresh, and slightly acidic paste that crumbles easily. The outer crust is creamier, but both are very soft and delicate.
