Milk: Pasteurized Cow's Milk Type: Semi-soft cheese with washed rind. Fat: 45% Maturation: 3 weeks minimum. Region: Auvergne-Rhône-Alpes Serving: 150g approx. This soft cheese matures on a bed of rye straw and seems to absorb some of the earthy, pastoral aroma. It is creamy and its flavor suggests freshly cut wild grass, sweet hay, and flowers. This cheese has a Protected Designation of Origin (PDO).
