Milk: Raw cow's milk Type: Semi-hard cheese. Fat: 49% Maturation: 18 months minimum. Region: Fribourg, Switzerland. Its firm, smooth, ivory paste develops a nutty aroma and becomes slightly spicier as it ages. Contrary to popular belief, Gruyère doesn't have pits in its paste. This Reserva version has matured for at least 15 months in the mountains of Western Switzerland and enjoys Protected Designation of Origin status, a true gem.
